Presentation and processing
Most fin fish leaves Veraval either whole round or gutted; the value-added cuts — steaks, loins, fillets, portions — are made to order because yield and price both depend on the cut. Tell us the finished piece weight you need on the plate and we will work backwards to the raw material grade. Availability through the year
Wild-caught fin fish is seasonal, and the Indian fishing year is punctuated by the monsoon ban along the west coast. Croakers, ribbon fish and mackerel each have their own peak.
